The past two weeks have been jam packed. I’m sure you are in the same boat. Between my daughter’s oral surgery that has resulted in a lengthy recovery period and many events that all decided to fall within a week or so of each other, I hope you understand that the blog took a back seat this week. Arghh.
But wait! Instead of a new recipe or restaurant review, I am going to do a little archive dive to give you some ideas for dishes to make this Memorial Day weekend when I hope you have some fun planned with your family and/or friends. It’s the unofficial start of Summer so it’s time to celebrate. Here we go…
Hosting guests or more importantly, are you a guest yourself? Here are a few things that you could pack for your host or hostess to contribute to breakfast…
Or the very seasonal Rhubarb Almond Crumb Cake…
Maybe you need an appetizer to bring to a party. Think about one of these options…
Or Grilled Zucchini Roll-Ups with Herbs and Cheese…
Need to whip up a quick (or pretty quick) lunch in between activities? Try these delicious options.
Make these Turkey & Zucchini Burgers before you head out for the morning and they cook off quickly for a light lunch with a salad. They are wonderful as a little appetizer as well…
Or an Asparagus, Hame & Gruyere Tart?
It’s Memorial Day and that means it’s officially grilling season. Here is an option for you. Use the marinade for beef or even chicken if you prefer.
And while this Salmon with Orange and Avocado Salsa isn’t written for the grill, it’s the salsa that matters in the recipe and you can serve it with any grilled fish you like…
Here are some options to go along with any grilled meats or fishes.
Shaved Tuscan Kale and Brussels Sprouts Salad…
or a Kale Caesar? (look at my old photos! Ugh!)
Farro Citrus and Arugula Salad serves as a side and a salad all in one…
And Mango & Coconut Rice Salad is both tasty and pretty on the plate…
And don’t forget dessert, the course that everyone remembers!
Marcella’s Almond Butter Cake is one of my favorite dessert recipes on the blog, pulled from the pages of the book Stir by Jessica Fechtor…
And this Peach & Blueberry Crumble is made with a gluten free Quinoa Oat Topping…
Enjoy the long weekend and I will see you next week!
Yum! We have had your turkey lettuce wraps and peach & blueberry crumble a few times, so good! Good ideas for graduation weekend too! 🙂 Can’t wait to try the blueberry muffins too! Thank you!
Oh good! And congrats on your graduate!
Great idea to have these reminders of easy, tasty recipe reminders. Hope you have a Hapoy Memorial Day!
